Watermelon & Cherry Tomato Salad

My family and I try to eat salads at as many meals as possible. This particular salad is so easy and refreshing, perfect on a hot Summer day. Plus all the ingredients were purchased at our farmers market! Watermelons are too die for right now, so sweet and juicy!

This recipe was adopted from this amazing vegan cookbook! I just added the jalapenos! I like the added kick it gives the salad but they are totally optional. Enjoy!

2 boxes cherry tomatoes, halved
2 small bunches cilantro, chopped
2 bunches of green onion, chopped
1 medium seedless watermelon, cut into bite sized pieces (use a melon baller)
2-4 jalapenos, seeds removed & chopped (OPTIONAL)
6 tablespoons lemon juice and zest of 1 lemon
6 tablespoons of balsamic vinegar

Mix all ingredients together and chill for one hour before serving.
